Ras el Hanout, what is it?

 Ras el Hanout is one of the most complex spice blends found in the world.

This mixture of spices, where it originated, remains very present in the Maghreb countries, particularly in Morocco.

Traditional Ras el Hanout recipes vary between 24 and 27 spices, you can find some that contain 40!

Composition, history and origin

Historically, in the souks, each grocery store owner endeavored to compose the best blend of spices and to highlight it. He placed it at the head of the gondola in order to stand out from his competitors. It was his trademark, his way of differentiating himself. This mixture was simply called “Ras el Hanout” which literally means “Head of the grocery store” , meaning the best in the store.



 It is sometimes called “Maghreb Curry”. Ras el Hanout of course has the base of a curry (Turmeric, ginger, cumin, coriander, cinnamon, cloves, nutmeg, pepper) but it nevertheless remains very different from a Curry, its floral and citrus notes provided by all the spices not present in a curry distinguishes it very clearly.

Ras el Hanout is a journey in itself. At the first bite: its flavor opens towards an enchanting Orient, dreamy, soft and sweetened by Ceylon cinnamon; slightly enhanced by its five peppers, the warm fragrances of an ancestral combination Turmeric, Ginger, Cumin, Nutmeg, Coriander. In the end, a floral complexity comes to the sense of smell and tasting: it is the addition of cardamom, Centifolia Rose, Galangal and Iris root with violet scents.

It is a delicate and complex mixture. I consider it above curries because of its subtleties.

Its aromatic complexity is such that it is better to have a freshly ground Ras el Hanout, whose flavors are fully preserved, to have all its top, heart and base notes.

Historically Ras el Hanout contains two particular ingredients: Belladonna and Cantharide fly. Belladonna is a plant which turns out to be toxic depending on the dosage and the Cantharid fly secretes Cantharidin which turns out to be a poison in high doses and also an aphrodisiac. It is said that Félix Faure abused it. This would have caused his popular death. We preferred not to include these two ingredients in our composition.

The origin of the Ras el Hanout mixture seems unknown but its uses were found in the Middle Ages, mainly in Morocco. It was a reflection of the fine Moroccan gastronomy found in the royal cities.

In the kitchen

It goes without saying that Ras el Hanout will be used in your couscous and tagines. But its aromatic complexity, its fragrant flavors will easily enhance your vegetables, dishes in sauce, vegetables such as eggplant, carrot, zucchini or turnip. It is also used in the composition of certain desserts such as Feqqas from Morocco. Surprisingly but very good, it can be incorporated into your coffee. It will perfume it completely.

Likouala Vanilla Bourbon and Pepper Crème Brûlée

 Ingredients

  • 1.5liter of cream
  • 0.5liter of milk
  • 240g of egg yolk
  • 140g of sugar
  • 2Bourbon Vanilla pods
  • 5g of Likouala Pepper

Preparation tips



Infuse the vanilla and pepper in the milk and cream.

Blanch the egg yolks and sugar, 

When the milk & cream mixture is infused and hot, pour over the blanched yolks, whisk and pour the mixture into crème brûlée ramekins

Bake in the oven for 1 hour at around 100°C until the creams are "shaky" 

Let cool and refrigerate for at least an hour before serving.

Pour in a tablespoon of sugar (brown sugar) and caramelize with a blowtorch to obtain a beautiful caramelized sugar crust!

Sichuan pepper chicken

 Ingredients

  • 300g of chicken fillet
  • 1green onion (or spring onions)
  • 1piece of ginger (thumb size)
  • 1clove garlic
  • 1tablespoon of soy sauce (for cooking
  • 1tablespoon of soy sauce (for cooking)
  • 1tablespoon of sesame oil
  • 1teaspoon of Sichuan pepper
  • 5Fresh red peppers (or bell pepper if you're not used to the heat)

Preparation tips



Slice the chicken.

Add the soy and rice vinegar to this  .  Leave to marinate for 30 minutes.

Cut the peppers (choose peppers and the number according to your appreciation of spiciness). Slice the green onion, garlic and ginger.

In a pan, brown the chicken and set aside. In the same pan, add oil, chili peppers, Sichuan pepper and brown.

Add the chicken, ginger and garlic, soy sauce, a teaspoon of sugar (or honey). Cook for 5 minutes.

Finally add the green onion and sesame oil. Serve immediately with basmati rice.

Chocolate fondant with Tonka bean and Timur Berry

 Ingredients

  • 200g of Chocolate
  • 3eggs
  • 150g of powdered sugar
  • 40g of flour
  • 200g of butter
  • 1tonka bean
  • 1/3teaspoon of Timur berry

Preparation tips



Melt the chocolate and butter together in a bain-marie. Preheat the oven to 200°.

Meanwhile, in a salad bowl, break the eggs and add the sugar. Beat this mixture until you obtain a nice foamy cream. Then add the sifted flour and the melted chocolate and butter. Mix well.

Finally add a grated Tonka bean (or a carton of Tonka bean) and 1/3 of a teaspoon of finely crushed Timur berry.

Mix the device again.

Butter a mold (or put parchment paper) and pour everything into the dish.

Place in the oven and cook for approximately 20 minutes.

Make your spice mix for your gingerbread

 Ingredients

  • 25gCeylon Cinnamon
  • 4gStar Anise (Badiane)
  • 8Cloves
  • 5gCoriander (seeds)
  • 1/4teaspoon of nutmeg
  • 1/2teaspoon of Ginger
  • 3/4teaspoon of Cardamom (seeds)
  • 4gGreen Anise

Note that we always use Ceylon Cinnamon, our favorite, more subtle, more elegant than Cassia Cinnamon ( for more details )

If you use Cassia Cinnamon, reduce the weight to 15-20g

Einkorn flake pancakes with turmeric and endive and apple salad

 Ingredients

  • 180gsmall spelled
  • 1case of malted yeast
  • 2eggs
  • 1clove garlic
  • 3endives
  • 1piece of ginger
  • 1Turmeric
  • 1Red Apple

Preparation tips



1. Pour the einkorn flakes into a salad bowl and cover them with hot water, just to the level. Leave to rest while you prepare the endives.

2. Cut the end of the endives and remove the central part. Cut them in half lengthwise and slice them finely. Cut the apple and dice; Reserve it all in a salad bowl.

3. Add the malted yeast, turmeric and previously peeled and grated ginger to the flakes.

4. In another bowl, whisk the eggs with the peeled and pressed garlic. Pour the beaten eggs over the flakes. Salt, pepper and mix.

5. Heat a medium oiled pan then pour the mixture over the entire surface (otherwise make individual patties). Leave to cook for 6 to 8 minutes. over high heat before carefully turning over (see front). Finish cooking for about 5 minutes.

6. Meanwhile, prepare a good vinaigrette and mix it with the sliced ​​endives.

7. Slide the pancake onto a serving dish, cut it into quarters and serve with the endive salad.

You can make a single large pancake, in this case, to prevent the pancake from breaking when turning it, you must slide it onto a plate then put the pan upside down on the plate and turn quickly. Otherwise make individual pancakes. For more “gourmet” pancakes you can add grated cheese but the yeast recalls the taste of cheese, in a healthier version. Einkorn is an old variety of wheat, its gluten is therefore better assimilated.

Vietnamese salad like a Banh mi

 Ingredients

  • 6slices of country bread
  • 200gsmoked tofu
  • 4salad leaves
  • 3carrots
  • 3tomatoes
  • 2shallots
  • 6case of Soy sauce
  • 20clsunflower oil
  • 1of Ancho Rojo pepper from Mexico
  • 50gsugar
  • 10clvinegar
  • 15clwater
  • 1Egg yolk
  • 1mustard

Preparation tips



1. Make the pickles: Peel and cut the shallots into slices. In a small saucepan, combine the sugar, vinegar and water. Bring to the boil, mix to dissolve the sugar then add to the shallots. Let cool.

2. In a bowl, put the diced tofu. Add half of the soy sauce. Leave to marinate.

3. Rinse, drain and cut the salad. Peel and grate the carrots. Cut the tomatoes into thin wedges. Gradually place these ingredients in a salad bowl. Rinse and chop the coriander, which everyone will add according to their taste.

4. Prepare the spicy mayonnaise: In a bowl, pour the egg yolk and 1 tsp of mustard. Start whisking using an electric mixer or a whisk, as soon as the mixture sets, add the sunflower oil in a small stream. Your mayonnaise is ready when it holds together well on the whisk! Add the remaining soy sauce and a pinch of chili pepper to taste.

5. Cut the bread into cubes to make croutons. In a small pan, heat a drizzle of oil, and brown the tofu and bread croutons for a few minutes over high heat to brown them. Add them to the salad bowl.

6. Add the pickled shallots, and sprinkle with the soy and chili mayonnaise.
