Ingredients
- 180gsmall spelled
- 1case of malted yeast
- 2eggs
- 1clove garlic
- 3endives
- 1piece of ginger
- 1Turmeric
- 1Red Apple
Preparation tips
1. Pour the einkorn flakes into a salad bowl and cover them with hot water, just to the level. Leave to rest while you prepare the endives.
2. Cut the end of the endives and remove the central part. Cut them in half lengthwise and slice them finely. Cut the apple and dice; Reserve it all in a salad bowl.
3. Add the malted yeast, turmeric and previously peeled and grated ginger to the flakes.
4. In another bowl, whisk the eggs with the peeled and pressed garlic. Pour the beaten eggs over the flakes. Salt, pepper and mix.
5. Heat a medium oiled pan then pour the mixture over the entire surface (otherwise make individual patties). Leave to cook for 6 to 8 minutes. over high heat before carefully turning over (see front). Finish cooking for about 5 minutes.
6. Meanwhile, prepare a good vinaigrette and mix it with the sliced endives.
7. Slide the pancake onto a serving dish, cut it into quarters and serve with the endive salad.
You can make a single large pancake, in this case, to prevent the pancake from breaking when turning it, you must slide it onto a plate then put the pan upside down on the plate and turn quickly. Otherwise make individual pancakes. For more “gourmet” pancakes you can add grated cheese but the yeast recalls the taste of cheese, in a healthier version. Einkorn is an old variety of wheat, its gluten is therefore better assimilated.
