Trained in pastry and baking, Vincent already has a very rich background. He worked in the Grand gastronomic restaurant of Georges Blanc in Vonnas. Eager to learn and discover new cultures, he went to England then to Dublin and became a pastry chef in a large hotel in the city. Vincent returns to France to become the youngest teacher at the Tjusi Japanese school in Liergues at the age of 24. For 12 years Vincent took pleasure in training the elite of Japanese chefs who came to seek French technique and know-how in pastry and chocolate making. At the same time, Vincent is passionate about chocolate and continues to refine and enrich his techniques. Passionate about sculptures, he worked day and night for 3 years to imagine, create and master the art of chocolate at his fingertips.
It is his hard work that will allow him to win the famous sesame in 2018, the coveted title of “Meilleur Ouvrier de France Chocolat-Confectioner”. That day, he brought to life an impressive chocolate sculpture of a Bressian woman from the 18th century. A true work of art which allowed him to stand out.
Since 2020, Vincent has reconnected with his two passions.
Passion for teaching future students at the prestigious Institut Paul Bocuse in Lyon.
Passion to create and innovate by launching La Maison Vincent Durant and its precious chocolates. “Jewelry chocolates” inspired by sublime Bressan enamels.
By launching the “Vincent Durant” House in 2020, Vincent and his wife CĂ©line advocate a modern chocolate factory, but also inseparable from its original region: Ain.
Passionate about the history of his region, Vincent draws his inspiration from it and in 2018 created Precious Chocolates, “jewelry chocolates” with a design directly inspired by the sublime Bressan enamels of the 18th century and with very local ingredients (including the famous Bresse AOP butter). ).
Vincent selects local ingredients, grown in the heart of the Dombes (milk and butter, spices and peppers or even sunflower seeds) and favors organic. Exceptional ingredients, from a land he knows and loves, that’s also the “Vincent Durant” signature.
Vincent is a young, brilliant, daring man with an exceptional career, but he is also a man who remains simple, accessible and generous. And that’s perhaps also why we love our chocolates even more!
